Fata Trapuntina has found her roots making bread with natural yeast. 

In Italian the natural yeast it it called mother yeast, and it's feminine, 

because she gives life to the bread, I suppose. 

Making bread contains much about ancient rituals and archetipes. 

In my opinion, the story of the bible about Jesus multiplying the bread, before being changed by the established church over the centuries, 

was about Jesus teaching people about natural yeast. 

Infact if you add, for example, 1 liter of water and 1 kg of flour to a fist of mother and let it raise between 3 and 5 hours, you get 2 kg of bread. If you want to make more bread, you leave it a bit longer, until it goes acid again and add 2/3 liters of water and 3/4 kilos of flour (i do it by feel so i can't be precise with the quantities yet) and you get loads of bread and so on. 

It is alive and it grows. 

I believe that's what Jesus taught his people so that they could feed themselves forever (if they kept the knowledge alive).
